Chocolate Gravy and Biscuits

Have you ever had that family recipe you grew up eating and it was your favorite meal? For me that was chocolate gravy and biscuits. Yep you heard that right. Not many people seam to have heard of it before. They usually crinkle their nose when I tell them. However, I have ran into some people who have had it and it is usually people from the south.

This was something that my grandmother always made us grandkids for breakfast when we would come over and visit. Oh how we always wanted to stay the night with grandma. The next morning we would wake up with our mouth’s watering waiting to have that fresh off the stove chocolate gravy poured over hot biscuits with butter melting on it. I’m sure you can only imagine how much kids would love this. As we got older me and my sister’s learned the recipe and started making it at home on occasion. Now as adults we make it for our family and sometimes guest when they come over.

The first time I made it for my husband and daughter they thought I was making them some weird breakfast, but was willing to try it. Now it has become a favorite of theirs as well. My husband occasionally ask for it and when I make it without a request, he ask what he did to get such a special treat.

It has turned into our Christmas morning breakfast. Now that I have started this “healthy” eating lifestyle, the way we always made the chocolate gravy isn’t the healthiest with regular flour and sugar. So now I have endeavored to come up with a recipe to make it “good for you.” Using all natural ingredients. So here is one of my first attempts.

I had almond flour and coconut flour on hand and saw the perfect flour to make some gluten free, grain free biscuits. That I’m still working on, for some reason they did not rise much. Not sure if using the mixture of this flour needs more baking powder than normal. That will be another blog…

On to the chocolate gravy. First I put in 2 tablespoons of almond flour and 2 tablespoons of cocoa into the sauce pan. Mixed those two together and added 3/4 cup of cashew milk. One of my sister’s makes hers with water because her family likes it more like a dark chocolate. My family likes it with milk. Instead of adding regular milk I use cashew milk or almond milk. After adding the milk I stirred in 1/4 cup of honey. I have in past substituted stevia for sugar and it tasted good, but again I’m trying to go all natural on this and make it as most would consider clean. I cook this over medium heat and stirring constantly until mixture thickens. However mine wasn’t thickening. I figured it was because of the almond flour so I added 1 tablespoon of coconut flour. After that it thickened some, but really didn’t until I took it off of burner and it started cooling waiting for hubby to come to the kitchen table.

I usually add 1/2 teaspoon of vanilla and butter. Today I omitted the butter and I was out of vanilla. It didn’t turn out as good as the original. It tasted more “grainy.” I think because I used the almond flour for the base. So next time I’m going to try just coconut flour. I told my husband he just gets to be the ginny pig while I keep experimenting on this until I get it right. For some reason, I don’t think he minds. Once I get it perfect, I will blog about it. All in all it turned out pretty good, but still not quite like the original recipe taste.
